About the Role
An exciting opportunity has arisen for a highly talented Head Chef to join and lead our Steakhouse. The Head Chef will be responsible creation of a distinctly different and highly creative Steakhouse restaurant with highest level of authenticity, innovation, quality, consistency and profitability.
This role requires someone who is an inspirational communicator who can motivate colleagues and is perfectly able to articulate the vision and mission of the business unit. This person must be able to uplift & empower colleagues. The delivery of the organisation values is just as important as the values themselves.
The Head Chef's main duties will include:
- Responsible to create, define and position the Pier Chic Product.
- Responsible to continually upgrade the Brand / restaurants SOP Manual, detailing standards of Performance, Policies and Procedures pertinent to the efficient operation of the outlets front and back of house in accordance with Jumeirah Group Food and Beverage policies & Municipality requirements.
- Guides the team in menu planning and design, in development of standard recipes to ensure consistently exceptional quality in food production in his / her restaurants and exceeding guest expectations.
- Liaises with Purchasing to ensure prompt and efficient purchasing, issuing of supplies, stock control and inventory control.
- Meets and interacts with guests / dignitaries.
- Make recommendations to the Group Culinary Director for modernisation of equipment, production methods and presentation to improve guest satisfaction at his Restaurant.
- Ensures that all safety rules, emergency procedures and fire prevention are strictly followed by all colleagues.
- Actively promotes the consideration and implementation of creative innovative ideas throughout all Restaurants with in the Restaurant Group to drive excellence in both product and service.
- Assures HACCP and Food Safety compliance.
- Ensures a thorough check of the BOH area is conducted. Any areas found not to concept standard must be rectified.
- Develops and implements operationally efficient systems for the restaurant that it could be implemented in all local and international locations if opportunities arise.
- Ensures competitor analysis is carried out on a regular basis for the local market. Ensure all recipe training documents are produced to the brand standard and are accurate.
- Assists in the building of an efficient team of colleagues by taking an active interest in their welfare, safety, training and development.
- Conducts direct report Performance Appraisals to review colleagues' performance.
- Demonstrate commitment to the development and implementation of the QMS and continual improvement of its effectiveness by:
- Ensuring measurable quality objectives are established and actively participate in the review of these objectives.
- Ensures the availability of resources.
- Ensures departmental reports, schedules, standard recipes, menus, food presentation photographs and correspondence are completed accurately and in timely manner.
- Attends meetings, briefings as directed by TRG.
- Responds to changes in the Food and Beverage function as dictated by the industry or company.
- Production methods, presentation and improved guest satisfaction.
About You
In order to be considered for this role, you will have an internationally recognised Culinary degree or diploma and have a minimum of five years of international experience working within a free-standing Restaurant, with a particular focus on Steakhouse. In addition, you should have experience of running branded casual restaurants, large volume venues and high demanding environment. You should be well versed in culinary concept, and menu development.
This is a very "hands on" and demanding position so it is paramount that you work well in a team but are also able to set standards and lead by example at all times. You must be comfortable working under pressure and be passionate about producing cuisine of the highest possible standards.
It is also essential that you have good command of the English language (spoken and written) and you should be proficient in Microsoft Office applications.
