Head Sommelier
Major Responsibilities:
• Driving beverage revenue in the outlets and maintain beverage cost within budget
• Controlling and monitoring wine orders, stock and par level
• Creating and maintaining up to date wine list as per St Regis standards after coordination with Outlet Managers and Executive Sous chefs on new menu design
• Reviewing and analysing sales to ensure stock rotation and profitability remains within targets
• Training all F&B team members on existing and new products, as well as selling techniques and any other necessary beverage trainings
• Constantly reviewing guest feedback, JD Power, Mystery Shopper results and planning and implementing corrective action if needed to ensure guest satisfaction
• Building rapport with key suppliers and always checking on special offers and negotiating best price with suppliers
• Participating in strategy meetings pertaining to the different environment in the markets
• Tracking and sharing information regarding new business trends and generate new business opportunities.
