Dessert Director / Executive Pastry Chef

We are seeking a highly motivated Executive Pastry chef with a passion for F&B and especially desserts who can think “outside the kitchen”! The ideal candidate must be super creative and very adaptable to a fast paced changing environment. This person needs to have great inter-personal skills, has excellent communication, and be able to manage both a junior & senior team. Capable of working in a stressful high volume environment and get through challenges with a smile. Experience should include managing a restaurant or small business with a successful track record. Also financially astute & capable of reporting results and analyzing opportunities. Must be able to interact closely with co-founders, manager and assistants, and be capable of running a small business with minimal supervision.
The Dessert Director needs to be an excellent communicator, and be clear with his/her messages. Must be extremely self motivated, enthusiastic and proactive giving his/her 100% dedication to this lifestyle. The Dessert Director has to be open to unique and creative ideas from co-founders, and be able to think outside the box and discuss new ideas of his/her own. He/she should be able to work under pressure, meet deadlines and keep the quality of the desserts at the highest standards to ensure client feedback is always positive. Half the requirements will be spent in the kitchen baking with the pastry chef and creating new ideas, and ensuring consistency is there in all the desserts. And the other half should be focused on operations and outlet management.

JOB DESCRIPTION:

  • Assist in setting up central kitchen and adding new desserts to menu of Bakery
  • Must be able to manage the Kitchen as Executive Pastry Chef
  • Abide by ISO training, train team in Central kitchen/bakery
  • Flexible at working hours, and always be punctual
  • Establish a guideline to follow at the bakery when it comes to safety, health, cleanliness, respect and quality
  • Assist in ensuring targets are met, and profit margins are maintained by monitoring costs through the business control system
  • Ensure that the quality is always consistent with strong attention to detail
  • Lead the team by being creative in the products and solving problems on the spot
  • Extremely organized and be able to plan the day ahead at ease to effectively meet established deadlines
  • Responsible on keeping check on food inventory and outside orders
  • Ensure quality control is checked and approved prior to sending desserts out to clients
  • Able to take on new tasks designated by co-founders
  • Act on any client feedback if needs direct action
  • Adhere to all systems and procedures set by co-founders 
  • Manage a team of junior & senior team members and be able to scale for growth 
  • Work closely with other Pastry Chefs to assist in setting up new additions to the SugarMoo menu 
  • Develop SOP guidelines for operations 
  • Create recipe manual for all products created 
  • Monitor product with Chef to ensure Quality is always consistent
  • Ensure bakery has a great work flow and resolve any issues 
  • Be involved in any Web/App updates
  • Implement interface for ordering online (through app or website), from Web to Bakery & to dispatch outlet (As soon as something is ordered, for Chef and logistics team be ready) 
  • Manage both locations at bakery and dispatch outlet 
  • Assist on our marketing on both traditional & social media 
  • Look for best Kiosk setups and locations (whether in malls, highly populated areas, or even birthday/event functions at villas) 
  • Build relationships with suppliers, retail partners, procurement managers, hotels and other business institutions 
  • Monitor costs spent, and insure sales are growing on a monthly basis  Trouble shoot problems & flag bottle necks at early phase 
  • Training & development of staff 
  • Weekly calls with co-founders to discuss progress of the week.  Research & development of new concepts and products 
  • Motivate team, along with pastry chef and logistics delivery to always be positive. We encourage & highly promote an engaged, motivated and passionate workforce 
  • Ensure we are always a step ahead of the competition (locally and globally) 
  • Focus on improving branding and packaging of SugarMoo 
  • Ensure client satisfaction is always exceeded 
  • Keep clients engaged and have them interact by doing specials and discounts on certain desserts at opportune times 
  • Develop long term monthly, quarterly & annual plans 
  • Strategize with co-founders new business opportunities & growth plan for the business 
  • Media Savy and capable of being spokesperson across all media outlets 
  • Influential in the community and up to date with all trends pertaining to business
